Step aside, scrambled eggs - there's a new breakfast choice to check out. Scrambled tofu may not be new, but it's perfect upgrade for your Meatless Monday breakfast or brunch menu.


The reason why people often skip tofu on their menu is because they think it looks and tastes bad. Let's be honest, eggs are eggs, and tofu isn't quite the same. Many people find tofu bland and not very appealing. Plus, if they've tried it cooked, they usually aren't fans of the taste or texture. But here's the deal—tofu will actually absorb the flavor of whatever you season it with and have really good texture. This is why most tofu scrambles tend to be somewhat bland, possibly overly seasoned, or just not very interesting.

What You Need to Make Scrambled Tofu

Firm tofu - Go for organic non-GMO firm tofu because it's perfect for making scrambled tofu, especially if you have some leftovers. When you pan fry firm tofu, it gets a nice golden brown crust that helps it stay together without falling apart, while the inside stays light and fluffy.


Kala namak - This is a total game changer. If you haven't tried it yet, you're gonna love it, and there's no going back. Kala Namak, or Indian black salt, is also known as Himalayan black salt. It's packed with health benefits. This is the salt that makes your tofu scramble taste amazing. It's definitely the star of the show.


If you haven't used it before, just a heads up—it has a bit of a sulfur smell, but once you mix it into your scramble sauce, it reminds me of boiled eggs. It really adds a rich umami flavor to the scramble.


Scramble seasonings In addition to the black salt, the mix of ground turmeric, garlic powder, onion powder, and paprika is the perfect mix of seasonings that really gives the scrambled tofu an incredible flavor. The turmeric and paprika are what give it that eggy yellow color. Feel free to add a bit more sea salt or kosher salt if you like, but we found the black salt was just right.


Tahini + dairy-free milk - Usually, scrambled eggs are made with a splash of milk or cream, and instead of oil, are cooked in butter. This makes the eggs fluffy and creamy. In the plant-based world, scrambled tofu can get that same texture by using oat milk—especially the extra creamy kind—and tahini. This has been a game changer for me. When you mix them together, you can't even tell you've added anything; the scrambled tofu just becomes way creamier with a richer flavor.


Black pepper - I love black pepper in scrabble eggs or spinkled on fried or poached eggs. So it should come as no surprise to see black pepper in this recipe. Not only does it give the scramble some serious delicious taste, but research has shown, the piperine compound in black pepper is what helps us absorb all the good stuff in the turmeric (e.g., its anti-inflammatory and antibacterial properties).

From Garden to Plate: What Ingredients You Can Grow

The best part of this recipe is stepping out into your own backyard to grab fresh additions. Here are the best ingredients you can grow yourself to elevate this dish:


  • Cherry Tomatoes: Add them toward the end of cooking until they just begin to burst.


  • Soybeans: If you're an ambitious gardener, you can grow your own soybeans to make tofu from scratch!


  • Leafy Greens: Spinach, kale, and Swiss chard wilt down beautifully and add a boost of nutrients.


  • Aromatics: Onions, garlic, and leeks provide a savory base layer of flavor.


  • Colorful Veggies: Bell peppers (any color), zucchini, summer squash, and mushrooms all add flavor and texture.


  • Fresh Herbs: Chives, cilantro, parsley, basil, and oregano all bring a fresh, vibrant finish to the dish.


When swapping fresh herbs for dried ones, remember this rule of thumb: use three times more fresh herbs than what the recipe asks for in dried form. So, if it says 1 teaspoon of dried basil, just use 3 teaspoons (or 1 tablespoon) of fresh basil instead.


Step-by-step instructions on how to make the best scramble tofu


  1. Drain the tofu and wrap it in a thin dish towel. Add something heavy on top, like a cookbook weighted by a cast iron skillet. Press for 15 minutes to release a lot of water.


  2. Make the sauce mixture next. First, place the spices, kala namak, tahini, and nutritional yeast together in a bowl and whisk to combine. Slowly pour in the oat milk while. Continuously whisk, until you have a creamy golden sauce.


  3. Crumble the tofu into chunks. You can use your hands to do this step, just make sure they are clean. Alternative you can use a spatular to break up the block of tofu in the frying pan. Make sure the peices aren’t too big or too small, medium bite-sized chunks are just right.


  4. Brown the tofu. Heat the oil in a skillet over medium-high heat. Once it’s hot, add the tofu and fry until the pieces are lightly golden.  This will give you a really nice texture.


  5. Add kosher or sea salt to taste and more Kala Namak as needed, and enjoy with your favorite sides! We didn't add any additional salt to ours, as we felt that the Kala Namak was sufficent.



Tips for making the best tofu scramble


  1. Choose the Appropriate Tofu - This is the first step in creating delicious scrambled tofu is choosing the right type of tofu. Most people choose extra-firm tofu because it holds its shape really well. This is what we have traditionally done, but recently we changed up what we are doing, and it has made the world of difference.

  1. Pressing The Tofu - After picking out your tofu, the next important thing is to press it. When you open your tofu packet, you'll see it's packed in water. Tofu itself is full of water. Pressing gets rid of the extra moisture, which is key for a firm and tasty scramble. To press tofu, wrap it in a clean kitchen towel or paper towels and put something heavy on top, like a cast-iron skillet or a few cans. Let it sit for at least 15 to 30 minutes. This helps the tofu soak up more flavors when cooking and makes it taste better.


    If you use extra-firm tofu, simply do not press out as much water, simply use a paper towel underneath and over the top and simply press down firmly on the paper towel to get most of the water out. This should only take you about 30 seconds.


    When buying tofu, go for brands that are organic and non-GMO. Also, check the expiration date to make sure it's still fresh. There's nothing more frustrating than returning from the store to discover that the tofu is expired and no longer fresh. Ask us how we know!


  2. Seasonings: Tofu is known for its ability to absorb flavors, so don’t be shy with your seasonings. Start with a base of black salt and pepper. Other seasonings include incorporating additional ingredients such as turmeric and paprika for color and a hint of earthiness, nutritional yeast helps give a cheesy flavor, and garlic powder and onion powder for depth.


    Scrambled tofu doesn't just need to be served for breakfast, you can also experiment with spices like cumin, or even a dash of chili powder for a kick. Adding chipotle seasoning will give warmth. Marinating the tofu in a mixture of your favorite sauces, such as soy sauce or tamari, can further enhance the flavor profile before cooking. By using different seasons and creating different flavor profiles, you can make many great recipes from around the world.


  3. Cooking Technique: Dont over crowd the pan when you are pan-frying your tofu. This will dramatically change its texture and taste. It will make the difference as to whether you pan-fry the tofu or steaming it. There is a big difference here. Heat a non-stick skillet over medium heat and add a splash of oil, such as olive oil or sesame oil, to prevent sticking. Once the oil is hot, add the crumbled tofu and let it cook undisturbed for a few minutes to develop a golden crust. Stir occasionally to ensure even cooking.

    If adding vegetables, sauté them first before and set them aside before pan frying the tofu. This also helps to not over crowd the pan. Veggies such as kale or spinach can be added when you add the sauce mixture as they will wilt fairly quickly.


  4. Make sure you don't skip the Kala Namak. This really is the star of the show. There is no going back for us. This is a staple in our cooking. During the cooking process the kala namak can loose some of its punch, so sprinkling a little over the top of the scramble tofu before serving helps to enhance the "eggy" flavor.

How to serve Tofu Scramble

There are many great ways to serve scramble tofu. Here are just a few ideas!


  • Classic Breakfast: Serve with a side of toast, avocado slices, and your favorite hot sauce.


  • Breakfast Burrito: Wrap the scrambled tofu in a warm tortilla with some black beans, salsa, and vegan cheese.


  • Sandwich Filler: Pile it high on top of toast with some sprouts and a drizzle of vegan mayo. This is really delicious we love to eat scrambled tofu this way!


  • Grain Bowl Topping: Serve over a bed of quinoa or brown rice with roasted vegetables for a hearty meal.


  • On Top of Avocado Toast: Elevate your avocado toast with a generous scoop of scrambled tofu.


Storage and Reheating:

Whether you’re getting ahead on your meal prep or—on the rare occasion—actually have leftovers of this delicious dish, knowing how to store them properly is essential for maintaining that perfect "just-cooked" texture. While tofu is remarkably resilient, it can lose its moisture and dry out if not handled correctly. Follow these simple steps to ensure your scramble stays fresh, tender, and flavorful for days to come:


  • Storage: Once cooled, store your leftover scrambled tofu in an airtight container in the refrigerator. It will stay fresh and delicious for up to five days.


  • Reheating: * Stovetop (Recommended): Reheat gently in a skillet over low heat. If the scramble looks a little dry, add a tiny splash of oat milk or water to restore its creaminess.

    • Microwave: For a quicker option, reheat in 30-second intervals, stirring in between to ensure it warms through evenly without getting rubbery.
